I have made this recipe 3 times now and it is SO good that my husband has even requested it as his birthday cake. He's NEVER requested anything I've made (when it comes to cakes) as his birthday cake because he doesn't generally like cake, so this was a big deal!
We have eaten this recipe as a cake with the filling in the middle and we have eaten it with the cake and the filling and whipping cream on top. It's good any way you put the combination of ingredients together. Once you see how easy and YUMMY it is to make strawberry shortcake you will NEVER buy it from the store again. I PROMISE!
Let's get to the recipe:
1. Make a white cake from the box instructions or from scratch whatever your preference. Don't forget to spray pan with non-stick spray so when you flip the cake it comes right out!
2. While the cake is baking make the filling:
- 2lbs of diced strawberries
- 1/4c sugar
- 2tbsp cornstarch
- 2tsp vanilla
- Squeeze of 2 lemons
Stir and let it cook on medium low heat until it’s a thick jammy consistency. Let the cake and filling cool completely.
3. Make whipped cream:
- A pint of heavy whipping cream (2 cups)
- 1/4c powdered sugar
- 1tsp vanilla
Whip till stiff. (That’s what she said hahahahaha) Yes that’s why we have six kids.
Once cooled cut cake in half lengthwise. May God be with you on this one. I squealed when I flipped it and it worked.
Layer whip cream, then strawberry filling, then fresh sliced strawberries, add top layer of cake, more whipped cream and then fresh strawberries. It’s super easy!
