I am a stress eater. On my quest to feel better, lose weight, be healthier, and cut out sugar I had to come find something that I could eat when I was stressed but that also wouldn't ruin my lifestyle change.
I love baking! I also love adding vanilla to all the recipes but honestly, it's an expensive additive. Once I learned that it's literally just vanilla beans, Vodka, and time to make it I decided we were no longer buying it! It probably took me 20 minutes to make the first time and that's with 6 kids and life going on around us!
I have made this recipe 3 times now and it is SO good that my husband has even requested it as his birthday cake. He's NEVER requested anything I've made (when it comes to cakes) as his birthday cake because he doesn't generally like cake, so this was a big deal!
Once upon a time I bought a bunch of bananas and with that particular bunch the kids decided they hated bananas. So, we ended up with 5 large over-ripe bananas that needed to be made into banana bread. I didn't feel like putting a ton of effort into it, so I just threw them together with some ingredients and what came out of it was literally the best banana bread I think I've ever tasted.
