Stone-ground grits are whole dried corn kernels that have been coarsely ground between the stones of a grist mill. The entire kernel, including the germ, is cranked through the mill, resulting in a coarse meal that is often speckled. These grits have a strong corn flavor and a chewy texture. They are characterized by their coarser texture, which requires a longer cooking time. Stone-ground grits are the most nutrient-dense and high in fiber and qualify as whole grains because the entire kernel is ground without further processing, leaving the germ and hull as part of the final meal.
GRITS
1 cup Old Mill Grits
3-4 cups water
Salt, pepper, butter to taste
Bring water to boil, add salt. Add grits, stir constantly. Cook until thick - 10-15 minutes.
Serve with butter. For cheese grits add grated cheddar cheese once grits are cooked
Something has changed with it. It seems more watered down and i used the exact amount of water and followed the directions to a t. Its not as strong flavor as it used to be. Something is missing. My husband agrees. Too bad I bought six bags.
